dinner inspiration post

 


Happy Tuesday, friends! I thought I'd share some things we've been eating and snacking on lately, including what the people in my house LOVE from Costco. I hope it inspires you with some ideas for your week.


Last night we had the most amazing taco salad. Well, not quite as amazing as the one Bill made for us for Trish's birthday dinner two weeks ago, but it was a close second.



I am thinking about taking the leftover ground beef and making this with it for my weekend. I just need some peppers, onions and taco shells, but these are baked tacos that are so, so good. I have made these a few times and every time, we love them. We eat Mexican a lot because it's our favorite and because it's super healthy for my hubby. I wish I had a picture of our taco salad from last night, but I was too hungry to stop and take a picture for you, but I made it similar to how my stepdad made it for us. I chopped up the lettuce really finely, I diced each of us a whole tomato, I put a heaping spoonful of taco meat on top of the lettuce tomato and topped it with shredded cheese, salsa (for me) and a tiny bit of ranch dressing (also for me). Todd ate his plain, and we both ate it with crushed tortilla chips in big bowls.


I've written about this quiche several times, but it's worth repeating, because I have finally found a recipe that is the best, after many tries of tweaking.



I use any filling I have on hand, but for tonight I'm using chopped ham, shredded cheese and spinach. Here's the recipe that is our favorite.


5 eggs

3/4 cup of milk

1/4 tsp salt 

1/4 tsp pepper

1/4 tsp nutmeg (do NOT skip this, it adds depth of flavor and is so good)

1/4 tsp hot sauce (again, don't skip this either, strange as it may seem)

1 cup of ham

3/4 cup of cheese

spinach


Mix together and pour into premade pie crust, baking at 375  for about 45 minutes. I always double the recipe and make two at one time, because it is that good. I also love to take this with me to events when I sign up to take something. It can be eaten at room temperature, after it's been cooked, especially when it's a vegetarian version.


We'll eat leftovers on Wednesday night and I'll eat after church because of choir rehearsal and Thursday is to be determined. I will see what I have on hand and go from there, but I have lots of options. I will be gone Tuesday, Wednesday and Thursday nights of this week, so though I'll be gone, I still plan on having food here for them. OH! That's what I'm doing for Thursday night. I bought Todd some frozen fish fillets for his dinner that night, along with rice and veggies.


Onto the Costco portion of this post. Have you ever had their chocolate chunk cookies from the bakery?



They are TOO DIE FOR and my Jonah loves them. I usually buy two containers at once, they get eaten up so quickly, thanks to all the guys and their friends. I also used to love to buy their croissants, but since I'm trying to keep away from bread, it's best I stay far away. 



Another favorite thing of mine from Costco are these k-cups. I have tried brand after brand of coffee, but I always go back to these. If they sold it in a bag, I would have bought it, but to my knowledge, this is different in the k-cup version of what they sell by the bag. 



This was my husband's idea of a funny joke last year when he went to Costco for me. He came home with all these containers of their peppermint bark! It was a good thing all of that was able to be kept in the freezer, because that is what we did. It was so good to have with an afternoon cup of coffee! He will not be doing this again this year, because of his healthier eating habits, but I'm going to still sneak one in when I see it in the store. 


My last favorite thing to get from Costco is their shrimp cocktail and/or shrimp salad. It is delicious! I love to have shrimp cocktail on the weekends with some naan dipping bread and spinach dip or hummus.

  1. All of your ideas and recent makes sound really good. I found a quiche recipe years ago that is my go to recipe- it's nice when you find THE ONE! I made a tomato galette yesterday with homemade pie crust since Donnie was gone (he likes meat with each meal) and tomatoes from the garden. It should have been good (the pie crust was ;)) but it was too tomato-y (I'm not a huge tomato fan but read that baking them mellows their flavor). I'll make baked chicken tonight, wing Wednesday and hopefully make it to Aldi on Thursday to pick up a few groceries including items for dinner. I usually am a little more on the ball planning wise but not this week. Have a great day, friend!

  2. This week we are having Burrito Bowls - same as you - Mexican at least once a week! We are also having spaghetti and breakfast for dinner. If I have to cook on Friday night, I will make quesadillas. Easy! My hub is very easy to please. I am really trying to work on our grocery budget with two in college and just two of us at home. I am eating from my freezer because it is stuffed.
    I love Costco products, but I only have the freezer attached for my fridge so I told Tom no more frozen Costco stuff until this is gone. I think you can also use Costco for healthier resources. My list looks different than it used to. I still buy orange chicken for my kids and the boxes of chips. They go through those like crazy.

  3. Thanks, Maria! Don't you hate it when you know something should have been good but it isn't? I always hate wasting time and groceries when that happens, and it happens to me at least once a month. For instance, the last time I made the quiches, the recipe measurement for salt was 3/4 tsp, which I followed, but it was WAY too salty. We ate it anyway, but I felt like I had raised blood pressure right after. (I somewhat try to do low-sodium things, because both Mom and Dad suffer with this, so it's inevitable that I will too.) Your other meal nights sound yummy!

  4. Amy, those dinners sound good too! My husband is the way as yours- very easy to please. That's a huge blessing! I totally get having to get used to having less mouths to feed. I know that makes a huge difference! I went through that this summer when just four of us lived here...having one less (two, really, though Drew's been out now for over a year) mouth to feed meant everything lasted longer and I kept buying too much. It's such a balancing act!

  5. Great idea for a post! I also love that peppermint bark and the Sam's and Costco cookies are delish. We bought a Gyros dinner kit from Sam's. It is so good, and has lasted for several dinners for just the two of us!

  6. I always love my Hello Fresh solely for the idea that I dont have to think of what to come up for dinner - LOL - we get 3 choices a week &I just put out the cards to Ricky &say, pick which one you want tonight - Easy peasy LOL

    What I'm spying is that stand you have your kindle on!!! is that a stand, or is that the cover with a stand on it? I think you posted one before like that.

  7. Now I want a Taco Salad for supper. Checked a bit ago and the Taco Truck is in town, so I believe we will stop on the way home. His chicken Taco Salad is delicious! I may have to sign-up for Costco or Sam's again. It's been quite awhile.

  9. I make a crustless quiche each week and it's my go to breakfast (or lunch with a side salad!). This week we're eating BLT grinders, herb marinated chicken with squash casserole, a turkey breast with broccoli & rice, a pasta casserole, and a Weight Watchers Tuscan chicken pasta. We buy (what looks like the same) cookies at Bj's and they are a huge hit. My boys also love the croissants and I've gotten so good at not eating a single one!

  13. Like Joanne, I really like a crustless quiche. I have an amazing recipe for one...and I need to pull that out soon! For dinner tonight, I used leftovers from last night's spaghetti with meatballs and made a meatball sub (on a keto bun). I don't use those keto-type buns too often so when I do it is a treat:)

  17. Your taco salad looks so delicious. I have no clue what we are having for dinner tonight as my meal planning is non-existent this week. I really should be more consistent when it comes to meal planning as it just makes life a whole lot easier! I love quiche and I will have to try your recipe with nutmeg. I've never used this in quiche before but I do like the flavour. Thanks so much for sharing xx

  19. The quiche looks so good. I love peppermint bark! The freezer is a great idea. I meal planned last week for four dinners, and only cooked one! I made Shay's (mixandmatchmama) Minestrone skillet, and it made so much. We ate on it most of the week. That means I already have three meals for this week planned. haha
