dinner inspiration

 

Happy Tuesday, friends! I thought I'd share some things we've been eating lately for some dinner inspiration. I'm sharing with you, but please share with me at the end! I love and need to be inspired in this pretty often, especially right now when my husband is limited in what he's eating because he's counting calories. I say "he" like he's doing it alone, but I'm doing this with him. 

I have to stop and say how proud I am of him. He's been doing this for three weeks now and he's down about twelve pounds. For now he's just cutting his calorie intake, but he may end up going to a nutritionist before it's all over and done. I'm so, so proud of him! He has stuck with it to the letter and hasn't gone above his caloric intake one time. Even while eating out, he's learned to make better choices.

That being said, he made a trip to Costco for a few things on Sunday and shopped their freezer to find something quick and easy for him to have if I'm not cooking. He found these tilapia fillets and had that for dinner last night.

He said it was really good! I paired it with some long grain wild rice. He told me he felt full and satisfied afterward, which isn't always the case. I'll add here that he drinks two protein shakes everyday for breakfast and lunch and very rarely will snack on something else during the day. He's not much of a snacker, though. (I wish I could say this!)

Last week, I bought these from Costco.

I haven't tried the tilapia yet, but these cod fillets were amazing! They're seasoned with Everything But the Bagel seasoning. I think I paired this with green beans or black beans. I can't remember, but that was last week. 

We will probably have tacos again this week, since it's something filling and yummy. I'll probably make pork tenderloin and veggies one night, and we have tuna that is made with all the good things and in the fridge for a quick meal for someone. I've been making cauliflower crust pizza on the weekends, which is so good. I get a thin crust from Kroger and top it with a smidge of alfredo sauce, then spinach, artichoke hearts, mushrooms, sundried tomatoes and a little mozzarella cheese. I've gotten really good at them and they're delicious. I think I may try to convince my hubby to eat some with me one day soon. 

For snacks, I like Skinny Pop or a glass of chocolate milk, which isn't necessarily healthy, but better than dessert. If I'm in a dire situation and needing chocolate, I eat a York peppermint patty. One is enough to satisfy the craving. I'd love to hear from you now! What are you eating for dinner this week? Do you have something healthy that you like to snack on?

  1. Congrats to your husband for losing all that weight! Unfortunately, it does come down to eating less/ fewer calories. When I want to snack fairly healthily, I will eat some mixed nuts or peanuts. They are a bit calorie dense but they have a decent bit of protein which keeps me full. I just have to try to not eat too many. I believe a serving size of nuts is 1/4 cup so sometimes I will actually measure that much out and limit myself to that amount.

  2. Thanks, Maria! We have seen that is true. Even so, he is doing such a great job and I'm just trying my best to help feel satisfied and full. We had taco salad tonight, which was delicious and with a reasonable amount of calories. I keep forgetting to buy more nuts! We have almonds, but he likes pecans, so I need to get him some more. I think you're right on that serving size. I remember from when we had them before. I hope you had a great day, my friend!
