Just For You, Bill

Since you're not on FaceBook, Bill, here is the much wanted recipe for the chicken tortilla soup. I also emailed it to Mom. Enjoy!!!!

Chicken Tortilla Soup

3 cloves garlic, minced
1 onion, chopped
3 tbsp margarine or butter
2 tbsp all purpose flour
3 cans chicken broth
4 cups half and half
1 can of cream of chicken soup
1 cup fresh salsa
1 can creamed corn
6 boneless, skinless chicken breast halves, cooked and skinned. OR you can use one oven roasted chicken from the grocery store.
2 tsp ground cumin
1 packet of dry fajita seasoning
3 tbsp chopped, fresh cilantro

To serve:
16 oz tortilla chips
8 oz shredded monterey jack cheese

In a large pot over med. heat, saute garlic and onion in butter for 5 min. Add the flour, and stir well, cooking for one more minute.

Add the broth and half and half. Bring to a boil and reduce the heat to low. Add the soup, salsa, corn, chicken, cumin, fajita seasoning and 2 tbsp of cilantro. Stir and continue to heat for 15 minutes.

Crumble tortilla chips into individual bowls, add 1/2 oz shredded cheese to each bowl and ladle in soup. Top each bowl with more chips, remaining cheese and cilantro.
